Ingredients

  • 2 pounds ground beef
  • 2 cups mixed shredded broccoli stems and carrots
  • 1 small yellow onion, diced
  • 1 clove garlic diced
  • 2 teaspoons lemon juice
  • 2 tablespoons lime juice
  • ½ cup tomatoe paste
  • 1 tomato, chopped
  • ½ cup parsley, chopped
  • ¼ cup chia seeds, ground
  • ¼ cup coconut flour
  • 3 Tbsp gluten-free Worcestershire (I like the Wizard brand)
  • 2 Tbsp coconut aminos
  • Sea salt and pepper to taste

Preparation
1.Preheat oven to 375 degrees.
2.Put all ingredients into a medium mixing bowl. Knead with your hands or mix with a wooden spoon until all ingredients are well blended.
3.Form meat mixture into a loaf and place it in a shallow baking pan or bread loaf pan.
4.Bake in preheated oven for 35 minutes or until cooked through. Serve hot.
