Nopal is known for it’s healing properties. It has been shown to help lower blood sugar and HA1c in patients with diabetes. It is also mucilaginous and helps to heal the lining of the stomach and intestines.

Ingredients

  • 4 Nopal cactus pads (spines removed)
  • 1 green onion chopped
  • 1 carrot shredded
  • 1 clove garlic diced
  • 2 tsp fresh lime juice or to taste
  • ¼ cup cilantro chopped 1 avocado, sliced or cubed Dash of pink sea salt and pepper to taste

Options (gut repair friendly)

  • 1 Tbsp fresh ginger, peeled and grated
  • 2 Tbsp basil, chiffonade

Options (not gut repair friendly for the first 2-4 months)

  • 1 large tomato chopped

Preparation
1. Chop nopal cactus pads into small squares and boil for 15-20 minutes then drain
2. Chop the green onion, garlic, cilantro, shred carrot, and squeeze lime juice and combine in a large bowl
3. Add Nopal cactus and gently mix
4. Serve with avocado on top and a drizzle of olive oil
5. You could also serve on a bed of fresh spinach
